Zuchinni Lazagna

-In a pan cook 2 whole packets of extra lean ground beef
-Drain all excess fat 
-in a separate pan sauté 1 whole onion and 5 cloves of garlic
-add the meat back to the pan and add salt and pepper 
-mix in 2 cans of tomato sauce and 2 whole tomatoes sliced 
- feel free to add any other veggies you may enjoy 
-cover the pan and simmer for 20min
-while this is cooking slice up 3-4 zuchinnis.
-grill each slice of zuchinni for about 2 min and pat off excess water with a paper towel. 
-in a separate bowl mix together 1 cup of racatta cheese and 1 cup of low fat cottage cheese 
- after everything is finished cooking  layer the zuchinni, meat sauce & cheese until you've used all the ingredients
-you can add some motzorella cheese on top of you'd like 
-cover the dish in a foil and cook at 375 for 45min to an hour. 
-uncover foil, and allow to cool for 15 min 
-slice up and enjoy
